6 vins pour apprendre à déguster, appliquer l’analyse sensorielle, comprendre la viticulture, la vinification, les accords mets et vins, etc. Tous les points clés du vin sont abordés dans une ambiance décontractée. Cet atelier est fait pour les amoureux du vins qui souhaitent découvrir les bases de la Bourgogne.

Rendez-vous et prise en charge

Tout le monde se retrouve au point de départ.

Le bâtiment est partagé avec un cabinet de physiothérapie. Entrez dans la cour au portail vert, vous verrez des escaliers qui descendent sur la gauche, avec un panneau indiquant "La Boussole du Vin", vous y êtes ! Ne venez pas avant l'heure du rendez-vous car nous pouvons parfois être en livraison.

Best wine tasting in Dijon

Wine Compass was one of the highlights of our time in Dijon. The tasting was fun, highly informative, and exceptionally well done. Matthieu is charming, engaging, and remarkably knowledgeable, not only about Dijon and Burgundy but also about wines from Spain, Italy, and other regions around the world. He also has a great sense of humor, which kept the session lively and approachable even as we covered some fairly complex subjects. We began with an excellent introduction to the geology of Burgundy and why it matters so much to the wines produced here. Mathieu explained Burgundy’s classification system, including village wines, Premier Cru, and Grand Cru, and then helped us understand how to approach a wine through its aromas, structure, and complexity. The tasting itself consisted of six wines, all served blind: two Chardonnays and four Pinot Noirs. Tasting them without seeing the labels made the experience particularly valuable. Rather than being influenced by a producer or appellation, we had to concentrate on what was actually in the glass. I came away with a much better understanding of just how important the nose is when evaluating wine and how aromas can reveal the complexity and character of Burgundy wines. I learned a great deal without ever feeling as though I was sitting through a lecture. If you are visiting Dijon and want to understand Burgundy wine rather than simply drink it, I highly recommend Wine Compass and Matthieu. An excellent experience from beginning to end.

Nice ambiance and fine wines

Matthieu was very cool! The wine tasting was in his little wine cellar, the ambiance was super. The event was funny and interesting and we tasted really good wines. I can only recommend!

English friendly wine guide!

Had a great time! The guide was very English friendly and was happy to answer any questions we had and wasn’t afraid to delve deeper into those topics. I learned a lot about the smells and taste of wine, along with the history and making of the wines in both France and Italy. Would easily recommend if you are in the area!

This experience was...

This experience was beyond what I expected. Somehow I was the only person who booked that particular day and Matt was absolutely wonderful. The old cellar is a fantastic setting which stays cool even during this heat wave! I didn’t have much tasting experience so he first went through the different aspects of how to taste wines. We tasted 3 whites and 3 reds, all different and all enjoyable in their own right, This is perfect if you’re looking for a guide who makes the tasting more personal and takes the time to really talk about the wines with you.

Informative & fun

I loved this tasting! Matt is very knowledgeable and passionate, but is also able to make the experience fun, and the world of wine seems less intimidating with him. I'm way more knowledgeable about wine and about food & wine pairing than I was before the workshop.

Wine tasting differently

It was a wonderful experience with a very entertaining Sommelier that has a different and modern approach. He Is not looking for you to taste what he wants you to taste, but instead gives you the right guidance to explore your wine. Very knowledgeable guy. We have done many wine tasting and this was one of the more funnier ones without loosing the focus of explaining the wines of the Bourgogne.
